BiEnara Bar Restaurant Achieves Notable Recognition at Local Medieval Tapas Contest

The BiEnara Bar Restaurant has achieved notable recognition this week at the Local Medieval Tapas Contest in Estella-Lizarra, thanks to its innovative creation called “Arima.” This victory grants the restaurant the opportunity to represent the city in the international final of the Network of Medieval Cities and Villages, set to take place in Almazán (Soria) from November 14 to 16.

The winning dish, designed by renowned chef Ibán Garín, pays homage to the historical recipes of the Navarre region. “Arima” consists of a crispy tube filled with smoked Iberian pork jowl and grilled rabbit, accompanied by a portobello mushroom and truffle duxelle, a black fig chutney with wild spices, and a creamy beetroot with citrus notes. This creation not only stands out for its originality but also complies with the contest’s regulations, mandating the exclusive use of pre-Columbian products.

The contest was held at the Peñaguda Society, where a jury composed of representatives from the municipality, hospitality professionals, culinary instructors, and other experts evaluated the proposals. The event organizers expressed their gratitude to the Peñaguda Society and all participating restaurateurs, highlighting establishments like Monjardín Bar Restaurant, Xanti Café Bar Restaurant, and Roncesvalles Bar by Paco.

The passion for medieval cuisine in Estella-Lizarra doesn’t stop here, as the Medieval Tapas Days will take place from October 23 to 26. This event invites locals and visitors to savor the innovative creations from participating establishments. It will serve as preparation for the grand final in Almazán, where BiEnara will compete with renowned chefs from other locations who have demonstrated their expertise in their respective contests.

Through events like this, the Network of Medieval Cities and Villages reaffirms its commitment to promoting authenticity, heritage, and creativity in medieval cooking, thereby fostering cultural and gastronomic connections among its municipalities.
