The capital of Spain is getting ready to host the First Madrid Route of Almadraba Red Tuna, a gastronomic event that aims to bring the authentic taste of red tuna from the traditional almadrabas of Cadiz to the people of Madrid. This initiative, driven by the Cadiz company Petaca Chico and the distributor Prodesco, will take place from May 1st to 31st and will involve the participation of 12 prominent restaurants in Madrid, offering a variety of dishes and tapas focused on this exquisite product.
The establishments joining this route include La Bernardina, Insurgente, Carande, Bestial by Rosi la Loca, Bichopalo, Krudo, Ganz Wine, Hotel Novotel Campo de las Naciones, Jimmy’s, Valdivieso and Umusic Hotel. Each of them will present throughout the month various culinary proposals where red tuna will be the protagonist, highlighting the versatility and quality of this essential element in Spanish cuisine.
The event will be inaugurated on April 28 at the facilities of the Prodesco Group in the capital. The opening promises to be a unique spectacle, featuring a live ronqueo, a traditional Cadiz technique for filleting red tuna. Two ronqueo masters will show the audience how to obtain up to 25 different cuts of this fish, while a specialist will explain each phase of the process, providing a cultural and educational context about this ancient practice.
In addition to tasting delights made with red tuna, attendees will have the opportunity to participate in a raffle of gifts related to this gourmet product. When ordering their dish, they will receive a card with a QR code that will allow them to access the raffle directly, promoting an interactive and enjoyable experience.
The organizers of the route, Petaca Chico and Prodesco, aim to celebrate the almadraba season and bring the festive spirit of this tradition, vital for the province of Cadiz, to Madrid. With this action, they also emphasize their commitment to sustainability and respect for the artisanal fishing of red tuna from the almadrabas.
Furthermore, as a closing to this culinary experience, the participating restaurants will have the opportunity to travel to Cadiz to visit the facilities of Petaca Chico and participate, on-site, in a day of red tuna fishing in the almadraba of Barbate. This connection between the product’s origin and its interpretation in Madrid’s cuisine will enrich the proposal, taking attendees on a journey back to the roots of this valuable cultural tradition.
