A Delicious Sunday: Seafood Paella

There is no better way to enjoy a Sunday than by preparing a special dish that brings family and friends together around the table. Today I invite you to explore the flavors of the sea with a classic and exquisite recipe: seafood paella. This dish, originating from the Valencian Community in Spain, is a feast of flavors and colors that will delight all palates.

Ingredients

For 4 people you will need the following ingredients:
– 400 grams of bomba rice (short grain rice)
– 1 liter of fish stock (homemade is better)
– 200 grams of clean and sliced squid rings
– 200 grams of clean mussels
– 200 grams of clams
– 200 grams of prawns (fresh or frozen)
– 150 grams of peas
– 1 red pepper sliced
– 1 green pepper sliced
– 3 ripe tomatoes grated
– 4 cloves of minced garlic
– 1 small onion finely chopped
– Extra virgin olive oil
– Salt to taste
– Saffron threads or a pinch of food coloring (optional)
– 1 teaspoon of sweet paprika
– Lemon (for garnish)

Steps to follow

Step 1: Prepare the seafood
Start by cleaning the seafood well. The mussels and clams should be free of sand and beards. If using fresh prawns, remove the head and shell, although you can leave them whole if you prefer. Reserve all clean seafood.

Step 2: Vegetable Sauté
In a paella pan or large skillet, heat a good drizzle of extra virgin olive oil over medium heat. Add the minced garlic and finely chopped onion. Sauté until golden.
Add the peppers cut into strips and continue cooking until tender. Add the grated tomatoes and a pinch of salt. Cook over medium heat until the tomato is well reduced and has lost most of its water.

Step 3: Add the rice
Once the sofrito is ready, add the rice and stir well to soak up the flavors. Cook the rice for a few minutes until it becomes translucent. Then add the sweet paprika and quickly stir to avoid burning, as it can make the dish bitter.

Step 4: Add the broth and saffron
Heat the fish stock and dissolve the saffron threads in it if you are using them. Pour the hot broth over the rice in the paella pan and stir well to mix everything. Adjust salt if necessary. From this moment on, do not stir the rice to achieve a perfect texture.

Step 5: Add the seafood and peas
Place the squid and peas on the rice. Cook over medium-high heat for about 10 minutes. Then reduce the heat and add the prawns, mussels, and clams, evenly distributed over the rice. Cook for another 10 minutes or until the rice is cooked and the seafood opens and is cooked.

Step 6: Rest
Once the rice is cooked and the seafood has opened, turn off the heat and cover the paella pan with a clean cloth. Let the paella rest for about 5 minutes for the flavors to settle.

Step 7: Decorate and serve
Before serving, garnish the paella with lemon slices, which will add a touch of freshness to the dish. Serve hot and accompany it with a good bottle of white wine or a refreshing sangria.
