Energy for the Week: Quinoa, Avocado, and Mango Salad

The week is starting and what better way to do it than with a fresh and nutritious recipe! Today we bring you a quinoa, avocado, and mango salad, a perfect combination that will not only satisfy your hunger but also provide you with energy and vitality to face the coming days.

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 ripe avocado
  • 1 ripe mango
  • 1 red bell pepper
  • 1 cucumber
  • 1/4 red onion
  • A small bunch of fresh cilantro
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions:

  1. Cook the quinoa:

    • Rinse the quinoa under cold water to remove the natural bitter coating called saponin.
    • In a medium pot, add the quinoa and water. Bring to a boil.
    • Once it starts boiling, reduce the heat to low and cover the pot. Cook for about 15 minutes or until all the water has been absorbed.
    • Remove from heat and let it rest covered for 5 minutes. Fluff the quinoa with a fork and let it cool.
  2. Prepare the fresh ingredients:

    • Peel the avocado, remove the pit, and dice it.
    • Peel and dice the mango.
    • Wash and slice the red bell pepper into thin strips.
    • Peel and slice the cucumber into thin rounds.
    • Slice the red onion into thin slices.
    • Finely chop the fresh cilantro.
  3. Mix all the ingredients:

    • In a large bowl, combine the cooled quinoa, avocado, mango, red bell pepper, cucumber, and red onion.
    • Add the chopped fresh cilantro.
  4. Dress the salad:

    • In a small bowl, mix the olive oil with the lemon juice. Add salt and pepper to taste.
    • Pour this dressing over the salad and mix well so that all the ingredients are coated with the flavor of the dressing.
  5. Serve and enjoy:
    • Serve the fresh salad on individual plates or in a large bowl. Now it’s ready for you to enjoy!
