Ingredients:
– Paella rice: 400g

– Prawns: 200g, peeled (reserve a few with heads for decoration)
– Squid: 200g, sliced into rings
– Mussels: 200g, cleaned
– Clams: 200g, soaked and cleaned
– Fresh parsley: chopped, for decoration
– Lemon: cut into quarters, for serving

Instructions:
1. Preparation of the Sofrito:
In a large paella pan, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until translucent. Add the red bell pepper and continue cooking until tender. Add the grated tomato and cook for about 5-7 minutes until a thick and fragrant sofrito forms. Add the saffron and mix well.

2. Add the Rice:
Once the sofrito is ready, add the rice and stir for a few minutes, making sure each grain is well coated with the sofrito.

3. Add the Stock:
Pour the hot fish stock into the paella pan and stir to combine all the ingredients. Add salt and pepper to taste. Bring to a boil and then reduce the heat so the stock is absorbed slowly. Cook for about 10-15 minutes.

4. Add the Seafood:
After this time, distribute the prawns, squid, mussels, and clams evenly over the rice. Cook over low heat for another 10 minutes, or until the rice is tender and the seafood is cooked. If needed, add a little more fish stock (hot) to ensure the rice is just right.

Once the paella is cooked, adjust the salt if necessary and let it rest for a few minutes covered with a clean cloth. Garnish with chopped fresh parsley and place the lemon quarters around the paella pan.
