Hospitality of Spain Launches the First Phase of the III Official Tapas and Pintxos Championship at Madrid Fusión.

Today, January 28, the cities of Albacete, Ciudad Real, Lugo, Palma de Mallorca, Salamanca, and Zaragoza are on edge as their representatives vie for the coveted title of ‘Best Tapas/Pincho in Spain’. This exciting competition is part of the third edition of the Official Tapas and Pinchos Championship, taking place within the renowned gastronomic congress Madrid Fusión.

The opening of this championship has received the support of prominent entities, including Alimentos de España, Mahou-San Miguel, Makro, and 1001 Sabores Región de Murcia. In the first phase of the competition, 31 establishments from different parts of the country participated, each representing their respective organizations and provincial hospitality federations.

A jury of ten gastronomy experts has evaluated the contestants and their proposals, judging based on criteria such as originality, flavor, and presentation of the dishes. After an exhaustive deliberation process, the list of the six finalists has been announced, who will have the opportunity to present their creations again before the jury today.

The finalists in the running for the title are: Javier García from Restaurante Martina, presenting his tapa “Manda Webos”; Jesús Iván Anaya and his assistant Javier Donaire from Complejo Turístico Mirador de La Mancha, with “Perdiz maíz y escabeche”; José Luis Pardo and Auriana Macías from Restaurante Orixe do Campos, showcasing their “Petisco Larpeiro”; Enrique Erazo and Emanuel Paggi from Restaurante Morralla, with “Coca – rroba”; Héctor Carabías and Driss Igazi from Restaurante Oroviejo, who have prepared “Canelón del Tormes”; and Susana Casanova and Fernando Solanilla from Bistró Café La Clandestina, exhibiting their tapa “Bregando”.

The grand final will begin at 12:15 pm in Pavilion 14 of Madrid Fusión. During this event, the finalists will demonstrate their culinary skills, adhering to strict evaluation criteria that consider functionality in the hospitality sector as well as the use of local or traditional products. It will also be required that each tapa or pincho be accompanied by a suitable pairing recommendation.

Gastronomy enthusiasts eagerly anticipate seeing who will take home the prestigious title of ‘Best Tapas/Pincho in Spain 2025’.
