Established in 1994 and known for its loyal clientele, which includes Their Majesties the Kings of Spain, this restaurant presents a proposal inviting diners to explore the flavors, aromas, and textures of the Peruvian Amazon. The Amazonas Tasting Menu, priced at 45 euros per person, VAT included, offers a six-course journey through the delights of the Peruvian jungle. Each dish tells an ancestral story reinterpreted with modern techniques, starting with a refreshing corvina accompanied by aguaje tiger’s milk and smoked cocona chalaca. This bite, which pays homage to the Amazon River, fuses acidity and a smoky touch for a surprising beginning.
Continuing with the proposal, the salmon nigiri is presented on a base of seasoned potato and lime juice, highlighting the fusion between Japanese technique and Creole flavors, a showcase of contemporary creativity in Peruvian cuisine. The prawn basket combines patacón and tuna tartare with mango chutney, creating a colorful and fresh dish that reflects the vibrant spirit of the jungle.
Another delight is the ripe plantain croquette, filled with cheese and served with mishkina mayonnaise, a bite that mixes sweet and savory, evoking the traditional flavors of the Amazon. The menu also includes additional options for the main dish, such as the renowned hen juane and wild ceviche, each wrapped in the tradition of Peruvian cuisine. To culminate this experience, various desserts are offered, promising to be the perfect ending to this sensory journey.
