Galicia is taking a bold step toward transforming its wine industry with an innovative project designed to challenge traditional notions about aging white wines. Under the leadership of Alejandro Paadín, CEO of Paadín Eventos SL, this initiative aims to demonstrate that Galician whites can compete in quality and longevity with the best from other regions of the world.
The project features an unprecedented sampling, encompassing a carefully selected trio of wines from each vintage and Denomination of Origin between 2010 and 2019. The selection includes a popular segment wine, a mid-range one, and a prestigious option, totaling nearly 180 references from over 130 wineries. This represents about one-third of the total viticulture in Galicia. The bottles have been meticulously preserved in the archive cellar of Paadín Eventos SL, which houses more than 8,000 Galician whites, forming the largest collection in the region.
Recently, a panel of experts, comprised of the technical directors from the five Galician Denominations of Origin, along with specialists from other wine regions in Spain and Portugal, conducted a sensory evaluation of the samples. This collaborative approach not only provides a more comprehensive assessment but also facilitates comparisons among different styles and terroirs.
The project’s methodology includes a 360° analysis, where each sample was tasted blind before undergoing a detailed study at the FOSS® in situ laboratory. Using advanced technologies such as WineScan™ 3 and FTIR, profiles of over 30 compounds in each wine were generated. This data will be integrated with climate, lithological, and enological records, employing multivariate models and machine learning to unravel the secrets of their evolution in the bottle.
Until now, the aging potential of Galician whites had been limited to theoretical debate. However, Paadín notes that “Galicia can position itself among the great aging white wine regions; we need figures to prove it.” This study aims to provide new data on the aging capacity of the wines and identify which factors, such as climate, soil, and winemaking practices, affect their evolution.
To ensure that these findings are accessible to a wider audience, they plan to publish the results in a monographic book that the Juana de Vega Foundation will release in 2026. This book will include tastings and technical sessions, with the aim of raising the prestige and international visibility of Galician whites. The Foundation is committed to ensuring that the results of the study transcend the scientific realm and reach the final consumer.
With over two decades of experience, Paadín Eventos SL has built a solid reputation in Galicia’s wine sector, being responsible for the Wine, Spirits, and Wineries Guide of Galicia, which has sold nearly 30,000 copies since its launch in 2012.
