Dulce de leche cheesecake

We were thinking about ideas to decorate our New Year’s Eve table so we realize it would be great to decorate our desserts also. Here you have a short tutorial about how to do dulce de leche cheesecake.

We have decided to put it in little bowls because then it is easier to distribute at dinner time, but you can do the same recipe as a big cake.

The good thing about this cake is that you don’t need oven so it is really easy and quick to make and you can do it even with children.

Ingredients

  • 250g mascarpone cheese
  • 250g Philadelphia cheese
  • 4 spoons of icing sugar
  • 1 egg yolk
  • 80g butter
  • 5g cinnamon
  • 200g crunchy biscuits

Method

1. Crush to crumbs the biscuits and mix them with butter until they form a paste similar to the one in the image below.

Cheesecake 12. Put on a bowl Philadelphia and mascarpone cheeses, the egg yolk and the icing sugar. Stir all until it is creamy.

Cheesecake 23. Make a base with the biscuit paste in the small bowl.

Cheesecake 34. Pour a portion of the mixture of the step 2 inside the small bowl

As sometimes you can have excess of biscuit paste, you can make small balls to decorate your cakes, as we have done.
